Kosher salt is only Kosher because a Rabbi said so, that is what makes it Kosher...I know about this because I work in the food industry with food ingredients. ALL SALT made in the US has to be REFINED according to FDA rules, and that includes rock salt...so there is no such thing as one salt being different from another - even sea salt has to be refined when it is commercially sold

Specialized salts include pickling salt, which is free of the additives that turn pickles dark and the pickling liquid cloudy, and rock salt, used primarily to de-ice driveways and make ice cream. When I say it spreads better, I mean when you sprinkle it on your food (for taste or for seasoning) it will lay better than other salts because it is less dense and flakier than others

You can buy a cheap scale and find out exactly which type of salt you have by leveling off one cup full of salt with the straight edge of a butter knife, then doing the simple math. Some people I cook for complained to me that some recent dishes were too salty (unusual for me) and I realized that I was at the bottom of my large box of kosher salt and the granules were like table salt, so I opened a new box and decided to use that salt for pasta, potato and veggie water only

(But if you've got some extra handy, or need to substitute a bit of table salt for other salts, you should be just fine.) Cooking salts like kosher salt (larger grains), pickling salt (very fine grain), and coarse or rock salt are distinguished by the size of the grains of salt - and the absence of iodine. I have read that some people are sensitive to too much iodine...and since your skin absorbs some of the salts in your bath, you may want to mostly use non-iodized salt in your bath salts

What makes kosher salt different from regular table salt? Kosher salt is so named because of its use in drawing moisture out of meats in order to make them kosher, not because the salt itself is made to adhere to specific dietary restrictions. The flaked shape means that more air also gets in-between each piece of salt, so one tablespoon of table salt is equivalent to two tablespoons of kosher salt

Hardly a bank breaker, especially when you consider first that whether you buy regular salt or kosher salt, in any given dish you are likely to be using mere fractions of a penny's worth. Kosher salt, on the other hand, has larger, coarser grains that are easy to feel and easy to sprinkle, making it much easier to gauge the proper level of seasoning

If it's a recipe that calls for a salt rub, where you rub the bird down with salt, let it sit, then pat dry and roast, you're not going to have as good of results with a replacement.
